Product stem food thermometer evaluated for accuracy. Hand wash station adequately equipped. Discussed cleaning schedule of bin within walk-in refrigerator utilized to capture drainage from boxes of broccoli. Floors throughout the facility are typically well maintained; identified floor of back storage area as requiring additional attention.

Comments: China King Chen, inspection conducted Thursday post-lunch rush. Restaurant/kitchen was to be in an improved state of cleanliness compared to prior inspections. Discussed the continued on-going maintenance to the kitchen ceiling; it is now repaired, smooth and cleanable, but requires a second coat of paint. Hair is properly restrained. All refrigerators and freezers were found to be adequately maintained clean and sanitary. Cold holding prep unit items and walk-in cooler items found at proper temperatures. Hot holding soups, and rice found at adequate temps, 155F. Thermometers available and installed throughout. Hood is scheduled for a professional cleaning next month. Owners/operators are complimented for improved cleanliness and maintenance. **Satisfactory**

Comments: Inspection conducted Thursday at lunch time. Discussed recent complaint, FSE17-003: a customer claimed that he experienced G.I.-illness approximately 9 hours after consuming pepper steak with onions, and pork fried rice. All cold holding walk-in cooler, and prep cooler items at adequate temps, 38-40F. All prepped meat, pork, and chicken ingredients are held for 3-4 days. Walk-in cooler is properly arranged, and inspector observed improved cleanliness from previous inspection. Food items are stored in food grade containers. All hot holding rice at adequate temps; 155-170F. Inspector was unable to verify if owner/operators have experienced any recent illnesses.

The walk-in is noticeable cleaner, including the shelving units, and repairs have been made to the seams of the paneling. The hood over the cookline was professionally cleaned on 12/2/16. Discussed future options for the marinating bowl and shelf organization in the walk-in to accomodate the marinating chicken process performed every 2 months.
