All hot holding steam unit and croc-pot items (gravy, mashed potatoes, macc n cheese, meatloaf, chicken ala king, peas, etc.) observed at adequate temps; 145-185F. Discussed daily prep and reheat procedures. Most menu items are made fresh each day then held for service. Discussed the requirement to submit a Notice of Intent (DOH-154) whenever a facility/restaurant makes any significant changes, i.e.: new equipment installation, menu additions/changes, seating or restroom changes. In July, two 3-door reach-in refrigerators, three reach-in freezers, and one reach-in refrigerator were installed, and the walk-in cooler was decommissioned (no longer utilized). Thermometers are installed throughout all coolers. The flooring has been repaired in the area of the reach-in freezers. Discussed the planned future repair of the floor and wall behind the dishwashing machine. Observed sausage gravy cooling(adequate technique); reviewed cooling procedures and temperature curve. Kitchen and cookline equipment and restrooms maintained clean and sanitary. Owners are commended for upgrades to the facility. |
