A new refrigerator was purchased and must be moved from below the waste line before being put in service.

Comments: All violations from 9/29/15 inspection have been corrected. Education was provided operator about avoidance of plastic containers containing a food item being reused to store another food item (except for dry goods storage when kept in a container or bag and the plastic container is labelled). Operator was also educated about reasons to keep dishracks off the floor so that racks are kept clean to avoid contaminating clean dishes or other items with dirt from the floor. A review was performed with operator regarding proper cooling procedures for potentially hazardous foods and the need for regular monitoring of food temperatures with a properly calibrated thermometer. Food temperatures measured with DOH thermocouple thermometer: egg salad 42 degrees F., beef vegetable soup 166 degrees F.

Comments: All violations from previous inspection on 3/24/15 have been corrected. SOFA Food Program Director Rob Alexander is aware of the kitchen emergency exit door with one glass window pane with small cracks within the glass which remains from previous inspection (cracks are within the glass pane and does not appear in imminent danger of breakage). Food temperatures were measured as follows when SOFA delivery was made at 11:45 AM: baked chicken in gravy 156 deg. F., mashed potatoes 175 deg. F., green beans 181 deg. F. A call was placed to SOFA kitchen headquarters in Elizabethtown where it was stated the kitchen had sent the chicken in gravy to Ticonderoga at 10 AM when it was sent out at 204 deg. F. Operator in SOFA kitchen indicated there was a minor delay in getting the food items out right away.
