The cooking and hot holding temperatures were discussed with cook, who agreed to keep copies of the meal delivery logs onsite going forward for review by the inspector during future inspections.

Comments: Notes: The new food service operator and the inspector discussed various aspects of the NYS Sanitary Code: Food Service Establishments, including eliminating bare-hand contact/contamination, the manual process of washing, rinsing, sanitizing and air drying, cooking temperatures, stacking order in refrigeration units to eliminate cross contamination of food items, etc. As per the operator, meal delivery logs are being completed weekly, but all reports are sent to the main office. A copy of these reports needs to be kept onsite for review by the inspector during our inspections. The process of taking meal temperatures and the specific times for doing so was discussed with the operator and the meal delivery driver.

Comments: Home delivered meal logs were not up to date. The last meal log was completed in June 2016. Quarterly meal logs are required.

Comments: No violations observed. Sanitizing levels for dishes and wiping rag solutions were measured and were acceptable. All temperatures measured during the inspection were within acceptable ranges. The old mechanical dishwasher died last week and was replaced this morning. The replacement dishwasher is a non-sanitizing residential-style dishwasher. This dishwasher replacement was discussed with the town supervisor, along with the necessary additional step of manually sanitizing dishes in the sink following the use of this non-sanitizing dishwasher. Also, other dishwashing options including residential-style sanitizing and commercial-style sanitizing dishwasher options were discussed. Following this discussion with the town supervisor he decided that a new residential style sanitizing (NSF approved) dishwasher will be purchased/installed in the near future. Until the new (sanitizing) dishwasher is installed a manual step of sanitizing in the kitchen sink needs to be carried out following a cycle through the currently installed dishwasher. When the new (sanitizing) dishwasher is installed the unit needs always be run utilizing the sanitizing feature of the unit.

Comments: The inspector and the operator discussed cooking and cooling procedures. All items measured with the DOH thermocouple were within acceptable ranges. Meal delivery temperatures were reviewed and within acceptable ranges.

Comments: The temperatures for delivered meals are being measured and recorded once a month. Monthly delivered meal logs were reviewed and all temperatures recorded at the end of the delivery routes were within acceptable ranges for hot-held and cold-held food items. All refrigeration units were working properly at the time of inspection. All temperatures measured with the DOH thermocouple were within acceptable ranges.

Comments: The temperatures for delivered meals are being measured and recorded on a monthly basis. The inspector reviewed the temperature logs for the past 6 months and all recorded temperatures were within acceptable ranges. Rapid chilling procedures were discussed with the facility operator. As measured with a DOH thermocouple spare ribs were at 198 deg. F and pasta salad was at 39 deg. F. The chlorine sanitizing solution was measured between 50 and 100 ppm.

Comments: New stove and dishwasher have been installed. Dishwasher was installed without DOH approval and the DOH inspector was unable to determine if dishwasher is NSF approved. The facility runs the dish washer on high temperature wash and dry cycles. Dinner was scramble eggs and hash browns. Temperature of eggs at cook time recorded as 194 degrees F (at 4:35 pm).DOH temped to go meal being held in oven at 148 degrees F at 5:15 pm. Temperature of hash browns was 189 at 4:37 and 140 at 5:16 pm. Per interview, approximately three meals are delivered each day. Furthest delivery is 3 miles from facility. Meals are temped on-site not in car when delivered.
