Chicken is purchase from green man food supply, stored on the bottom shelf in the walkin until use. Cooking temperatures were reviewed and operator stated they have a digital thermometer and temp almost all chickens before removing from the grill and temped to 165 °F or above. Hot holding in coolers was reviewed. No food is saved and no food is cooked and cooled from the previous day. Three bay dishwashing was discussed. An employee sick foodworker policy was discussed. All cold and hot holding temperatures were found to be acceptable. The menu was reviewed at the time of inspection. glove use was reviewed. |
