Most items arrive cold and are reheated to 165 °F. The sanitize cycle must be chosen on the options menu for the NSF residential dishwasher. Only a 2 bay sink without a sanitary air gap is located in the kitchen. Per interview all dishes are going back to the main kitchen 3 step washing and air drying. No food prep is performed on site. There is no mop/utility sink on site to dum mop water and there is no mop bucket or mop. Installation of a mop sink is recommended in the hot water heater room. |
