Comments: Manager Ian Parent was present at time of inspection. Manager states they have a later lunch hour that extends to (in the area of) 2PM. Inspector measured soup temperatures at approximately 2:45PM. Sanitizers measured at appropriate levels. Bain Marie in food service area at proper temperatures with tomatoes measured at 45 degrees and blue cheese measured at 43 degrees. Manager Parent said this facility is currently using a manual sanitizing step for dishes because the dishwasher is not functional. Manager states this unit will be repaired on Sunday due to the need to coordinate electrician and repair person.Education given. Any change in dish sanitization process must be approved by this office prior to instituting the change. Recent complain e-hips number ON1800060 discussed with manager Parent at time of inspection.

Temperatures adequate throughout: sliced tomatoes 43 degrees in prep station at grill and tuna temped at 42, salami temped at 43. Hot holding soup temped at 149 degrees and 159. Mandarin oranges salad station temped at 39 degrees; quartered tomatoes in walk in temped at 39 degrees; beef sandwich off of grill temped at 165 degrees. Sanitizer and gloves available. General manager mopping floors at time of inspection.

Total renovations require that entire facility must comply to current food code regulations. note new plans recommend additional hand sink at far wall by carry out and ice cream area. Current sink is not conveniently located for employee working carry out window.
