Recalibrated first three thermometers and operator discarded fourth thermometer and CORRECTED. 8b. In use food utensils stored with food contact area up. Operator washed rinsed and sanitized utensils, replaced with handles up and CORRECTED 12c. 3 Bay sinks are not draining, also no indirect drain present. Operator fixed sicks at inspection. Comments: 5A & 5E--1 flat of raw eggs -- 73 degrees, tuna salad -- 61degrees, potato salad -- 54 degrees, and sausage patties -- 68 degrees were all found in the 2 door cutting board cooler in the kitchen which was reading an ambient air temp. of 52 degrees. Burger meat -- 55 degrees, marinated chicken -- 52 degrees, steaks -- 50 degrees, macaroni & cheese -- 55 degrees, and sour cream -- 60 degrees were all found in the 2 door Delfield Cooler in the kitchen which was reading an ambient air temp. of 54 degrees. (All temperatures were taken with the inspector's calibrated FTT.) Since it is assessed that these products were > 45 degrees for more than 2 hours, the owner voluntarily discarded all of the product. Violation 5A is corrected. Violation 5E is to be corrected ASAP (Walk-in cooler to be used until these 2 units are fixed.) 15B--Some build-up on vent hood covers above cook line.
