Using a metal stem probe thermometer, foods inside the small cooler in the sandwich/wrap service area were recorded between 45 - 46F. As precaution, all foods requiring refrigeration were moved to a properly function cooler immediately. Recommend having this cooler service so it is capable of hold foods below 45F at all times. 2. Diced grilled chicken located in cold holding unit at the sandwich/wrap service area were temped using a metal stem probe thermometer at 60F at 12:38PM. Per interview with staff, the chicken was cooked earlier today between 9:30 - 10AM and placed in the line cold holding unit. The chicken was still in the allowable cooling time frame, but it is questionable if the chicken were to cool down to 45F or less within the next 3hrs. Staff removed the chicken from this cold holding station and placed on sheet trays inside the walk in cooler to rapidly cool. In the future, please make sure foods are at or below 45F prior to placing in the cold holding unit at the service area. 3. All violations must be corrected and are subject to enforcement action if not addressed in a timely manner. |
