There is a Sous Vide machine present in the kitchen. Per interview with Chef Matt Bolton, the machine is only used once a year and it is for educational purchase through SUNY Adirondack. The food that is prepared during the classroom session is not served to the general public. 2. ~12 hermetically sealed unlabeled jars of pickles present on prep table in kitchen. Per interview with Chef Megan Diehl, the jarred pickles were prepared during a classroom session through SUNY Adirondack and the pickles are not intended to be served to the public. Megan agreed to label all reduced oxygen packaged food and hermetically sealed canned food "Not For Public Use." Discussed obtaining an approved scheduled process for reduced oxygen packaged food and hermetically sealed canned goods if they decide to serve these types of foods to the general public in the future. 3. All violations must be corrected and are subject to enforcement action if not addressed in a timely manner. |
