Comments: Comments only: 1. A cooked ~15lb roast beef is present inside walk in cooler. Internal temperature was recorded at 39°F. Per interview with staff, the roast was cooked a few days ago and was placed in walk in cooler to cool after cooking. Provided proper cooling education. 2. Container of cooked clam chowder located on table in back storage room at room temperature was temped using metal stem probe thermometer in the range from 135 - 140°F at 2:45PM. Per interview with staff, the chowder was cooked earlier today and removed from stove and placed in back storage room to "cool" around 2 hours ago. Chowder was layered ~8" deep inside container. Provided verbal proper cooling education. Staff placed chowder into shallow pan and placed inside walk in cooler immediately. 3. All violations must be corrected and are subject to enforcement action if not addressed in a timely manner.
