Comments: Bacon and Chesse on bagel sandwiches are 131 F, sandwiches are cooked to 160 F and put out for service less than 2 hours and are kept covered in between service on hot line. The yogurt and tuna salad sandwiches stacked in two layers in steel tray with ice underneath. Next to the tuna sandwiches is tray of squash at 207 F. The lower layer of tunafish has a temperature ibewteen 48-50 F top layer of sandwiches range from 57- 62 F. The stack is reduced to one layer and others sandwiches are returned to refrigeration at time of inspection. All tuna fish is discarded at end of lunch. Other temperatures taken of food items and in refrigeration were found to be acceptable. Dishwasher temp190F.

Comments: Discussed deficiencies with the operator. Strongly encouraged them to obtain at least one additional probe thermometer so that they will not be faced with a situation of having no accurate thermometer to measure the temperature of TTCS food items. The following temperatures were recorded (degrees F): Two Door Reach-In - 39, Milk Cooler On Serving Line - 39, Milk Cooler in Adjacent Room - 42; On The Serving Line - Taco Meat - 162.7, Brown Rice - 175.7, Refried Beans - 135.7 (placed in oven and reheated to 167.5 within 30 minutes); Tuna Salad in Reach-In - 51.0 (transferred to freezer and after 30 minutes, temperature = 41.0). The Fire Suppression System was last inspected in May 2014. The Refried Beans had been in the tray on the serving line for about 1 hour before being reheated and the Tuna Salad was in the cooler for about 1 hour also before being cooled in the freezer. Report needs to be mailed.

Comments: No violations noted. Be sure any leftover milks or fruit cups from breakfast that are left by kids in the cafeteria are thrown away. As soon as breakfast is over items are to be thrown out by whoever is in charge of it- to prevent kids from picking them back up. Operator stated it is normally standard practice to have them thrown out immediately and it is usually custodial staff or aides that take care of this.
