F/ cold held items on the serving line: sliced peaches - 42 deg. F./ mayonnaise in the True refrigerator - 40 deg. F. A gutter has been purchased to correct the previous violation of a water line running through the dry goods storage area. The operator discussed the location for this gutter with the inspector, showing the inspector the purchased gutter, which will be installed in the near future.

Comments: Per interview with the kitchen cook, there are a few items (soups) that are getting cooled for service at a a late time. proper cooling procedures were reviewed and cooling logs were provided to be completed if the practice is going to be continued. The lower dial to the mechanical dishwasher is stickered for 160 deg F. when tested the upper dial (not labeled) read 170 deg F and the lower dial remained fixed at 150 degrees F. please refer to the manufacturing specifications as to what the wash and rinse/sanitize temperatures are and which gauge to read. Lunch and breakfast menses were reviewed for cooking and holding procedures being performed.
