Soup observed on stove, 201F. Discussed the cleaning schedule and routine for the refrigerators. Kitchen and bar area maintained clean. Upstairs bar and dining room still in use, then changes to the downstairs dining room during winter season. Hair restraint (hat) worn, hand barriers used. Dishwasher working as per manufacturer's specs. Restrooms adequate and maintained. The wooden racks/shelves have been removed from the keg cooler. Discussed salad bar operations.
