Comments: Oneida High School, inspection conducted Thursday during lunch. Chix Patty, hamburger, maccaroni n cheese, and pizza available today. All hot holdingbtemps observed adequate: pizza 152F, patties/burgers 160-170F, and macc n cheese 180F. Cold holding deli wraps observed, 45F. Cold holding practices hasve been modified; additional ice cryopaks are used, less sandwiches are held in the display cooler, and a quicker sandwich making prep time has been adopted. The high school FSE staff is now pre-chilling #10 cans of fruit for fruit cups. Thermometers are installed in all coolers. Dishwasher observed to be working as per manufacturer's specs. High attention to detail was observed regarding the cleanliness and "shine" of the kitchen equipment. Staff is complimented for overall cleanliness and procedures. A sharing table, set up and monitored by a science teacher, is set-up on occassion when the teacher is able to monitor it.

Comments: Oneida Sr. High School, inspection conducted Tuesday at lunch. Tacos, pizza, and daily pre-made sandwiches and salads offered for lunch today. Hot holding ground beef, and refried beans, observed at adequate temps; 145-150F. Pizza cook temps out of the holding cabinet, observed at 175-185F. Discussed option for maintaining cold temps of sandwiches and wraps once they placed at the service counter; this inspector suggest replacing the cryo-pak ice pack sheets with a properly executed ice-bath. Cold holding deli meat (ham and turkey) observed in reach-in cooler, 44F. Sanitizer buckets used throughout, found at adequate strength. Discussed staff concerns regarding the cleaning of the tables and cafeteria food contact surfaces; staff contends that they are not given enough time to properly santize surfaces after lunch is complete, and custodial staff refuses to use "bleach" as a sanitizer, the approved sanitizer for food service operations. Thermometers are installed throughout. Digital and product stem thermometers utilized and observed at proper calibration.

Adequate cooling technique implemented for turkey breasts; turkey breasts cut in half to reduce size of mass as required. Logbooks maintained for food product, refrigeration equipment and dishwasher; discussed the significance of staff's ability to recognize inadequate temperature(s) and provide corrective measures. Discussed storage location of dishwasher pre-rinse spray nozzle; spray nozzle shall be hung on hook when not in use. Overall, facility is clean and well maintained.

Comments: Oneida HS Cafeteria inspection conducted Monday at start of lunch. Chicken fajitas, pizza, chicken patties, french fries, corn, sandwiches, wraps, and salads, available today. Hot holding temperatures adequate: fajita chicken =157F, pizza =163-180F, refried beans =155F, chix patties = 168F. All sandwiches and salads are made using pre-chilled ingredients and held in refrigerated cabinet. Scullery room maintained clean. A new single door reach-in refrigerator, and a 3-door reach-in freezer have been installed. All coolers are clean and free of dirt, dust, and debris. Sanitizer buckets set up throughout all work areas. Discussed the lack of available space to properly inspect the walk-in coolers and freezers. The walk-in coolers are filled with product which requires a daily logistical dance by the cafeteria staff to reorganize and acccess ingredients. All cold holding cooler items at adequate temps, throughout. The dishwashing room is adequately maintained clean, and a dishwasher temperature log is maintained; adequate temps recorded. Product stem thermometers (3) calibrated and utilized. Discussed the over-crowded walk-in freezers; staff has to re-organize and restock it daily to be able to access product and be able to prep for the next day. The Walk-in freezers are maintained clean and sanitary and at adequate temps, but lack of adequate space is a daily logistics game for the kitchen staff. Discussed procedure involved to deal with the freezer condensate line; it should be tied-in to a permanent drain. Hair restraints and hand barriers utilized.
