Comments: Checked food temperatures- Chicken Smackers- 186 dF, Chicken Nuggets- 206 dF, Broccoli- 170 dF, Milk- 35 dF, Sliced Ham stored inside refrigerator- 38 dF, Tossed Salad w/ Turkey & Ham- 38 dF. Staff were observed properly using plastic gloves, utensils during inspection and also washing hands during inspection. Digital thermometers available, staff were observed checking and recording temperatures of hot potentially hazardous (TCS) foods during inspection. Checked wiping cloth solution- 200 ppm with Quaternary Ammonia test kit available. Also checked Free Chlorine residual at kitchen 3-bay sink - 1.5 mg/L. All refrigerated storage equipment which contains cold potentially hazardous (TCS) foods were maintained at less than 45 dF and installed with monitoring thermometers.

Comments: Observed several operational digital thermometers. When not in use stem of thermometers are briefly placed in sanitizing solution and then placed in jar to air dry. Temperature of food in hot holding steam table at service line was chicken nuggets at 145F-161F, pasta at 161F, and meatsauce at 168F. Turkey and ham sandwiches stored in commercial two door refrigerator behind service line had a temperature of 42F. Cold holding unit on service line was observed at a temperature of 42F per sanitarian's thermocouple- facility was not storing any time and temperature control for safety/potentially hazardous food (TCS/PHF) in unit at time of inspection. Sliced American cheese in walk-in cooler had temperature of 41F. Discussed children using tongs when reaching for fruit with edible skins to prevent barehand contact. Observed sanitizer (Quaternary Ammonia) in wiping cloth bucket near 3 bay sink at a concentration of 300ppm per facility test strip. Residual chlorine reading at prep sink near 2 door commercial refrigerator was 1.0 mg/L.

Facility has operational digital thermometers which worker was using to take temperature of broccoli and chicken nuggets in steam table on service line at 181dF and 193dF respectively. Observed facility's temperature logs for food prepared during the day. Cut melon on cold holding service line had a temperature of 39dF. Cut melons being stored in walk-in cooler had a temperature of 40dF. Chicken on salad in commercial refrigerator had a temperature of 32dF. Observed worker using pre-chilled mayonnaise and tuna, in small manageable quantities making tuna fish sandwiches. Staff was wearing gloves while preparing ready to eat foods. Chicken patties in hot holding cabinet had a temperature of 179dF. Chlorine residual taken at 3 bay sink is 1.5mg/L. Sanitizer (Quaternary Ammonia) in wiping cloth bucket had a concentration of 200ppm per facility's test strips.

Facility is cooling leftovers, such as taco meat, sloppy joes, macaroni and cheese, gravy and chili. Items are cooled in shallow metal pans with no cover. Then put in walk-in freezer. Taco meat in cold-holding (pass-through) unit that was cooled previous day was 38 dF. High-temperature dishwashing machine is not working. Facility is using 3-bay sink to wash, rinse and sanitize dishes, and styrofoam (disposable) trays are being used. Free chlorine residual of 1.5 ppm obtained at kitchen sink..
