The following items have been corrected from previous inspection 5E- 3 door beverage. cold holding equipment not functioning properly has been replaced by small walk-in cooler; 8E- thermometer in 3-door cooler inaccurate - refrigerator has been replaced and contains thermometer. 10B- gasket of leftmost door of 3 door cooler in disrepair-unit has been discarded and replaced with small walk-in cooler; 11D- wooden shelving inside walk-in freezer not clean, sealed; has been replaced with metal slotted shelves; 15A- floor in walk-in freezer not clean, has been replaced with linoleum; 15B- Back room of facility contains items unnecessary to food service- items have been removed. Recommend when reheating or heating liquid cheese to be hot held, not to use crock pots. Discussed heating and reheating using a double boiler or re-heat directly on a stove top in a method so that the cheese reaches a temperature of 140F or greater within two hours or 165F if being reheated.

Comments: Observed operational digital thermometers. Nacho cheese in hot holding unit had a temperature of 160F. Discussed recommended procedure of properly cooling phf/tcs food items in uncovered shallow metal pans in depth less than 4 inches, in ice bath, to allow the food to cool from 120F-70F within 2 hours, and from 70F-45F or less within 4 hours. Sanitizer (Chlorine) in wiping cloth bucket behind service counter was 200ppm per facility's test strips. A time table of correction for all non-critical violations listed above set for 6/15/18.

Comments: The following items were observed corrected from previous inspection: 5A-facility correctly using cold-holding waiver for holding of liquid eggs, other items, discard times marked on paper on refrigerator; 8B-probe thermometers stored clean and dry; 11D-make unit near cook line (interior and exterior), wooden shelving/cabinets across from cook line have been cleaned & repainted; 14A-no rodent activity observed; 15A-flooring around cooking equipment, in hall near walk-in freezer and refrigerator, inside walk-in refrigerator have been cleaned.

Comments: Discussed requirements for waiver from temperature control of liquid eggs, waffle, pancake batters with operator and cook. Observed soups cooling in uncovered shallow metal pans in walk-in refrigerator. Discussed cooling of macaroni, which includes cold water bath and shallow pans in walk-in refrigerator. Also observed reheating on stove top, which is capable of reheating to 165F+ within 2 hours, as opposed to use of inadequate means of reheating, including in hot-holding equipment. Demonstrated calibration of probe thermometers and recommended obtaining digital thermometers. Operators utilize Orkin for pest control, with monthly visitation. Violation 12C seems to be corrected--no condensate issued observed in walk-in freezer.
