Comments: The following items have been corrected from previous inspection: 8A- no items being stored on floor of walk-in freezer, 15A- large gap in floor by dish machine filled in, wall repaired next to ice machine, corner sealed in dry storage area, hole in floor repaired where water line was fixed. 15C- non-functional condenser enclose in walk-in cooler. 12E- Faucets replaced at hand sinks in both restrooms. 10A- Interior of ice machine cleaned. 10B- Exterior of ice machine cleaned. Free chlorine reading of 0.8 mg/L obtained from front hand sink. Discussed cooling pasta using ice and cold water. Pasta should be temped often and not left unattended. Discussed cooling, reheated and cooking temperatures. Discussed inspection with Kathy, if using a garlic+butter spread and can provide information that item is non-phf/tcs, garlic butter violation can be rescinded.

Area in which 3 bay sink and dish machine were removed, has been enclosed to prevent intrusion of construction dust and debris into food prep and food storage areas. Interview indicated the dish machine and 3 bay sink may be reinstalled by this Friday, she will call me with adjusted time table if needed. Ceiling area in disrepair between front waitress station and kitchen has been corrected.

Comments: Owner states the dish machine and 3 bay sink may be reconnected and functional by the end of this week. In the meantime, the facility will use the 2 bay sink + additional bus tub pan, in candy making area to wash, rinse, and sanitize all equipment and dish ware. Facility to use front hand sink and sink in candy making area for hand wash. This is temporary only. Temporary use of these alternative methods for ware washing and hand washing is not meant to imply approval for prolonged use. Will conduct re-inspection 1-22-14. NOTE, per DR's instructions, obtained a free chlorine reading of ~3.0 mg/l from the storage tanks at ~ 3:35 pm.
