Observed digital thermometer used by staff. Staff placed meatballs at shallow depth in metal pan without lid in walk-in cooler to meet cooling schedule of 120-70F in 2 hours then 70-45F in an additional 4 hours. Observed lasagna in refrigerator in beer store at temperature of 43F. Observed ice cream mixture in 3 door cooler at temperature of 38F. Observed time and temperature control for safety/potentially hazardous (TCS/PHF) salads in cold holding display case at temperature of 42F. All hand wash sinks had running hot water and stocked with soap and paper towels. Observed all candys stored in a manner to protect them from potential contamination in service room. Observed free chlorine at 0.7mg/L from 3 bay sink CWT during inspection. |
