Comments: Follow-up to inspection of December 14. Met with restaurant GM, who stated the dishwasher was functioning correcty "about 2 weeks ago", but once again, has since not been sanitizing for over a week. Manager stated the facility has made repeated attempts to secure a service call on the appliance, but has not been successful as the unit is owned by the facility, therefore, no service contract is in place. The machine was tested again during today's visit and no chlorine residual could be verified, following the final rinse cycle. Manager confirmed that staff has been manually sanitizing all cleaned wares pulled from the dishwasher, and stated he may attempt to make repairs himself. Furthermore, GM agreed to contact this Department when the repairs have been completed. | ||
