Comments: The Hamlet Diner, inspection conducted Thursday morning during breakfast and lunch prep. Observed and discussed the "stuffed chicken breast". No hot holding at time of inspection. Cold holding breakfast ingredients observed at adequate temps; 37-41F. Walk-in cooler items observed at proper temps. Observed, discussed, and reviewed the mashed potato cook and cool process. Discussed the use of the employee restroom as handwashing station, access needs to be maintained, and other options are encouraged. Operator is complimented for cleaning and maintenance of the walk-in cooler shelving units. Storage area shelves were observed to be clean, and discussed continued maintenance to maintain painted surfaces. Thermometers installed throughouit. Digital stem thermometer utilized.

Comments: The Hamlet Diner, inspection conducted Friday at lunch. Hot holding chilli found at 162F. Discussed reheating process and daily procedures and temperatures. Cold holding deli unit items adequate; sliced tomatoes 38F, and ground beef 37F. Panini press and microwave were found adequately clean, and discussed the improved cleaning routine for all kitchen equipment. Discussed handwashing procedures and the lack of a dedicated handwashing sink. Digital thermometer utilized at the cookline. Thermometers installed throughout. Facility is now contracted with a certified pest control company. Sanitizer buckets utilized throughout. Choking poster, cpr station, and permit are posted. Discussion with operator: this inspector suggest to remove and replace the shelving units of the walk-in cooler.

Cold holding temperature of home fries, hash and hash browns observed at temperatures less than 45 degrees fahrenheit. Discussed cold holding utilizing ice; ice must be level with the product within the container. Discussed replacing contact paper on counter in ice cream service area. Dishwasher operated in accordance with manufacturer instructions. Discussed refrigeration equipment; equipment when replaced requires replacement with commercial equipment.

Improved cleanliness observed regarding floor and floor mats within walk-in refrigerator. Pressboard shelf in ice cream service area has been lined with foil; discussed sealing shelf with laminate.

Soups and meatloaf adequately held within hot holding unit at temperatures ranging from 160-178 degrees Fahrenheit. Multiple product stem food thermometers evaluated for accuracy. Ice machine drain line has been repaired, discussed removing items from the top of ice machine. Hood filters are scheduled to be serviced this evening; April 10, 2017.
