Hot holding and cook temps of marinara sauce and meatballs and sausage observed; sauce 200F, meatballs 168F, and sausage 203F. Discussed daily soup making and holding routine with owner, on a typoical day there are no soup left-overs. Product stem thermometer available and observed at proper calibration. Sanitizer strength adequate, buckets utilized. Discussed: 1) the cleaning regime and routine for the shelves throughout the kitchen, 2) the planned/anticipated deep cleaning of the beer storage area of the walk-in cooler, tomorrow.

Comments: Ten Pin Restaurant, inspection conducted Friday after-lunch. Hot holding clam chowder found at 170F. Cold holding salad bar items found at 36-41F. Walk-in cooler cold holding found at adequate temps; sausage and bean soup found at 44F in the cooling process, and chili at 37F. Discussed with owner, that the hood and floor system behind the bar are scheduled to be professionally cleaned in April. Hood vents and housing were found to be free of accumulated dust and grease. Discussed the continued maintenance of the painted surfaces in the walk-in cooler, and the cleaning schedule/routine for both walk-ins. Staff is complimented for overall routine and procedures of the soup and salad bar. Hair restraints and hand barriers observed and utilized by kitchen staff. Discussed options for the floor behind the bar; the slotted platform has been replaced by a solid heavier decking.

Macaroni & cheese and soup of the day observed at temperatures greater than 140 degrees fahrenheit during hot holding. Discussed wooden sheets placed on shelving in walk-in refrigerator; wood shall be resealed or removed. Ventilation hood and bar floor are scheduled to be professionally cleaned in October.
