All hot holding and cold holding temperatures at the lunch buffet were found to be adequate: chicken pizza 151F, pasta and sauce 152F, and salad bar items 38-41F. In the time since the last inspection: the leakiong roof has been fixed, a new thermometer is available in the walk-in cooler, and work has been scheduled (tomorrow, 3/7/18) to remove and replace the grease trap. All coolers have thermometers installed and found to be adequately maintained and free of accumulated condensation/pooled water. All lights properly shielded. Restrooms adequately maintained clean and sanitary. Discussed schedule and routine for cleaning the restaurant equipment and shelves. Hair restraints and hand barriers used, Choking Poster, CPR Station and permit are hung. Management and staff are complimented for improved cleanliness and maintenance. |
