Comments: Pizza Hut - Chittenango, inspection conducted Tuesday at lunch. All hot holding and cold holding temperatures at the lunch buffet were found to be adequate: chicken pizza 151F, pasta and sauce 152F, and salad bar items 38-41F. In the time since the last inspection: the leakiong roof has been fixed, a new thermometer is available in the walk-in cooler, and work has been scheduled (tomorrow, 3/7/18) to remove and replace the grease trap. All coolers have thermometers installed and found to be adequately maintained and free of accumulated condensation/pooled water. All lights properly shielded. Restrooms adequately maintained clean and sanitary. Discussed schedule and routine for cleaning the restaurant equipment and shelves. Hair restraints and hand barriers used, Choking Poster, CPR Station and permit are hung. Management and staff are complimented for improved cleanliness and maintenance.

Cooked chicken, sausage, chick peas and chopped lettuce observed at temperatures ranging from 41-45 degrees fahrenheit while held for service at salad bar and within deli unit. Low temperature mechanical dishwasher operated in accordance with manufacturer instructions; final rinse temperture observed at 120 degrees fahrenheit and sanitizer detected. Discussed complaint received relative to leaking roof/ceiling; leaking roof/ceiling is a persistent problem requiring immediate correction. Discussed maintenance of walk-in freezer condensor; piece falling off.

Comments: Roof of building has been repaired (not replaced) and ceiling has been repaired. Manager states that since time of roof repairs, there have been no further issues. Improvements have been made as follows; tiles replaced below ice and dish machine, ventilation hood repaired, lights have been replaced with shatter-resistant bulbs, and walls throughout kitchen and dishwash area have been painted. Hot holding temperature of pasta, sausage pizza, and pepper & onion pizza adequately held at temperatures ranging from 140-173 degrees Fahrenheit on buffet line. Cold holding temperature of chick peas and cottage cheese held in salad bar adequately held at temperatures ranging from 36-41 degrees Fahrenheit. Improvements observed regarding maintenance, cleaning and replacement of aluminum sheet pans; on going maintenance and replacement of pans is necessary.
