Encourage reversing dishwashing process from left to right to right to left as a result of utility sink location. Product stem food thermometer evaluated for accuracy and calibration method demonstrated. Hand barriers utilized as required. Discussed eventual need for replacement of gasket on ice machine. Can opener and equipment clean and maintained, floors satisfactorily maintained, and wall within walk-in freezer has been sanded and is smooth and cleanable. Discussed household convection oven; when replacement is necessary, commercial oven is required.

Discussed with Supervisor; (1) the cleaning schedule and regular maintenance for the walk-in cooler floor, (2) a designated area for the staff's covered beverages outside of food prep areas. Hand wash station accessible and maintained. Hair restraints and hand barriers (gloves) utilized. Air handling ceiling vents, the ice machine, and the restrooms are adequately maintained. Discussed with staff that a second inspection will be conducted once the ice cream parlor of the restaurant is opened for the season.
