Comments: Food service operation has greatly improved since last inspection. Hot holding temperatures adequate: Meatballs held in hot holding units at temperatures ranging from 141-145 degrees fahrenheit. Cold holding temperatures adequate: Sliced ham, sliced tomatoes and ground meat observed within deli unit(s) at temperatures ranging from 35-42 degrees fahrenheit. Log book is maintained for pizza held within display case as required per TPHC approved plan. Food product stored so as to prevent cross-contamination with prepared food product. Improvement observed regarding interior base, shelving and compartments within refrigeration equipment. With the exception of item noted above, all previous violations have been corrected. Four door reach-in refrigeration unit is out of service at time of inspection.

Floor and threshold noted in previous inspection have been repaired. Lights in dough preparation area are properly shielded and condensor fan cover in four door refrigeration unit is reasonably maintained. Discussed requirement for screened door in the event that the kitchen door will be left ajar.

Cold holding prep unit items found at adequate temps, pizza prep and salad prep found 38-41F. Discussed cleaning routine and procedures for the refrigerators and their shelves. Restroom is adequately maintained.

Comments: Re-inspection conducted on Wednesday during lunch. The hood over the stove and deepfryer has been cleaned. Hot holding meatballs and sauce were found at 145F. Discussed reheating process and procedures for meatballs; precooked frozen meatballs are purchased from local supplier/perveyor. The deli prep unit has been adequately cleaned and silver magnetic tape has been used to seal and repair cracks and crevices. Inspector observed kitchen staff disassemble and clean the meat slicer after it was used. The restaurant has installed cleanable floor mats over areas of flooring with significant damage. Inspector discussed with manager, that an entire new layer of flooring should be installed throughout the kitchen and the refrigerator storage area. Discussed schedule and opportunities for cleaning the storage freezers.

Discussed repeat violations with Marcos, and refrigerator cleaning schedule. Ansul system reported to have been inspected in Feb. 2016, tag is misssing. Digital stem thermometer available and used.
