Comments: South Side Elementary School, inspection conducted Friday during "Pizza Day". Pizza cook/holding temps observed adequate, 168-204F. Cold holding tossed salad observed, 45F at service time. Yogurt parfait observed at 41F. Pre-packaged utensils used. Thermometers installed in all refrigerators and freezer. Shelves in the storage room are maintained clean and free of chipping paint. Dishwasher observed to be operating as per manufacturer's specs, wash temp 150F, rinse temp 200F. Product stem thermometer available. No sign of pests observed during this inspection. Discussed floor cleaning routine around the dishwasher.

Commercial high temperature dishwasher operated in accordance with manufacturer instructions; wash temperature observed at 150 degrees Fahrenheit and final rinse temperature observed at 185 degrees Fahrenheit. Discussed use of ice packs for cold holding; sufficient number of ice packs shall be supplied in order to adequately maintain required cold holding temperarture of food. Additionally, salad and other foods shall be adequately pre-chilled prior to being placed on food service line. Discussed maintenance of cabinet below sink. Discussed counter where opening is provided for garbage; opening shall be maintained in good repair and shall be easily cleanable. Additional hand wash signs provided at time of inspection. Facility is under contract with pest control company and making efforts to rectify rodent issues.
