Comments: Numerical thermometers available for evaluating cooked potentially hazardous (TCS) foods. Monitoring thermometers were available inside refrigerated storage units used to store cold potentially hazardous (TCS) foods, were maintained at less than 45 dF. Discussed proper use of plastic gloves, routine hand washing & utensils with kitchen manager during inspection. Also discussed topic of dented cans in basement dry storage area with manager during inspection. Facility uses Orkin Exterminating for monthly control of rodents/insects. Sanitizer test kits available for dish ware and wiping cloth solution. Will conduct a HACCP training with kitchen staff later in year.

Comments: Conducted a re-inspection to facility due to violations from previous inspection report of 2-23-18. Also, to check on partial kitchen remodel which was completed on 3-28-18. Regarding Item # 11 D- Interior surfaces of microwave oven have been cleaned, Item #15 A- New kitchen floor has been installed with new cove molding, Item # 15 B- New ceiling lights with protective shielding installed in kitchen. Also in kitchen, new low-temperature dish machine and 3-bay sink have been installed. Operator to obtain sanitizer test kit from supplier (Wilson's) prior to using dish machine ( chlorine test kit is available for use at 3-bay sink). Kitchen is approved for use by staff pending approval from City of Elmira Code Enforcement Officer.

Main stove equipment, dish machine and hood extinguishing system will not be replaced. Facility to contact City of Elmira code enforcement prior to construction. Per Manager, kitchen will not be in operation during remodeling, will use the main kitchen located at Salvation Army on Lake St for food preparation, to be delivered to facility. Commercial refrigerator and steam table hot-holding unit to remain located in eating area of facility, to be used store foods delivered from Lake St. location. Kitchen Manager to contact CCHD for a pre-operational inspection prior to re-opening remodeled kitchen. Discussed cooking temperatures for hot potentially hazardous (TCS), hot holding, cooling and reheating with Kitchen Manager during inspection. Numerical thermometer available for evaluating cooked potentially hazardous foods. Monitoring thermometers available inside refrigerated equipment used to store cold potentially hazardous foods. Discussed proper use of plastic gloves and utensils and routine hand washing with kitchen staff during inspection. A Time Table of Compliance Date of March 15, 2018 has been established to correct violations listed above. A re-inspection will be conducted after this date to determine compliance.

Recommended tray containing pan of deli meats, cheese be filled with ice as needed to ensure temperature of items is less than 45F or less. Temperatures during inspection 47-48F at top layer of meats, less in bottom layer where ice was still present.
