Comments: Conducted an operational inspection during lunch, food preparation was being conducted during inspection. Checked food temperatures- Hamburger Patties- 170 dF under hot-holding. Discussed hot-holding temperatures with kitchen staff during inspection, also proper use of plastic gloves and routine hand washing. Regarding previous violations from inspection report of March 15, 2018- Blue Item #11 C- Can opener blade clean, interior surfaces of microwave clean; Blue Item # 15 B- Ceiling bulb replaced, operational in kitchen. Previous violations corrected. Will conduct a HACCP training exercise with kitchen staff later in year.

Comments: A Time Table of Compliance Date of March 27, 2017 has been established to correct remaining violation above (Floor in ladies rest room). Will conduct a re-inspection after this date to determine compliance. Kitchen staff were observed using plastic gloves and utensils properly during inspection. Discussed proper thawing of frozen foods with Kitchen staff during inspection. Also discussed proper cooking temperatures and use of thermocouple with staff along with routine hand washing during inspection.

Comments: Discussed cooling recommendations and requirements with cook, such as using cold water to cool potatoes, pasta, in addition to icing or refrigeration in shallow depths, leaving foods uncovered during cooling process while in refrigerator, beginning cooling procedures immediately and not leaving at room temperature. Items requiring rapid cooling including cooked meats, vegetables, pasta, rice, potatoes, soups, stocks, etc., shall be cooled from 120F to 70F within 2 hours and from 70F to 45F or less within four more hours. Discussed reheating previously cooked items to 165F within two hours, barehand contact prevention, using clean food service gloves, not working while ill.
