Comments: At time of inspection, an alarm was sounding indicating the freezer door was ajar. Per interview with operator, the alarm has been going off for the last few days despite the unit appearing closed. Thoroughly discussed proper cooling procedures of potentially hazardous foods including providing handouts and specifications of time and temperatures. Potentially hazardous foods being cooled must drop from 120 degrees F to 70 degrees F within two hours and 70 degrees F down to 45 degrees F in an additional four hours. Additionally, education was provided on regulations for “family style” food service. The facility serves family style. Any left over food that has been served must be discarded. The served food may not be returned to the kitchen for re-service.

Educational materials were given on this subject. At the present time the 3bay sink has an indirect drain already installed. Food prep can be done in of the bays as long as it is washed, rinsed and sanitized before food prep begins.
