Discussed hot holding of cooked potatoes which must be held at or above 140° F. Discussed the use of Time as a Public Health Control. Discussed cooling of pasta, lentils, and sauce. Please complete a cooling log at least once a month. Discussed a better way to handle the walk-in cooler compressor condensate. Install a rigid plastic drain line to a 5-gallon bucket located in the corner. The bucket should have a cover and the drain line can go through a hole in the cover.
