Comments: Thermometers were calibrated on site and found to be accurate. Only analog thermometers are on site, a digital thermometer is recommended. Three bay dishwashing was discussed. An employee sick foodworker policy was discussed. All cold and hot holding temperatures were found to be acceptable. The menu was reviewed at the time of inspection. The dishwasher was working properly at the time of inspection. The walkin cooler is stocked to a point where there is little room for staff to enter and does not promote good air circulation. Additional refrigeration is recommended.

Comments: The breakfast and dinner menus were reviewed. The internal food temperatures of food in the walkin cooler were consistently at 44-46 °F for the items measured. The refrigerator internal thermometer read 38 °F. Second thermometer int he walkin is recommended to validate the installed thermometer. If the thermometer is not working properly it must be replaced and you must evaluate how to maintain more adequate temperatures in the walkin (lower the thermostat to the unit, store less food inside to increase air circulation).
