Hot dogs are cooked and hot held in a hot dog cooker at the concession table. Temperature of hot dogs was measured to be 140° F to 142° F. You must have a method of distinguishing between the hot dogs that are cooked and those that are still cooking. Per interview, the cook pot for the nacho cheese is washed, rinsed, sanitized in the home economics room. Hot dogs must be cooked to 140° F and held at 140° F. Nacho cheese should be heated to the directions on the label, which is 140° F. A digital food probe thermometer is available. Food handlers gloves are also available.
