Determined that they had been in steam table less than 2 hours. Reviewed that wonton can't be reheated in this manner. Re-cooled and returned to cooler until needed, then cook will bring them up to 165oF in wok before serving. 9C: Food worker taking care of deep fryers not wearing a hair restraint upon inspector's arrival. Grabbed his hat which was nearby and quickly put it on. 10B: Shelving in walk-in has some food debris and rust evident. Not smooth and easily cleanable. 15A: Floor vent near steam table shows a heavy accumulation of grease, dust and food crumbs.

Had been out since morning- voluntarily discarded 8A - Fly strips with insectson them were hanging over food prep area-food prep in progress.Removed 8A - cooling eggrolls(179 degrees) in wire baskets on floor by walkin cooler.Put on raised rack and put in cooler when cooler. 8A - Single serve soup bowls used as scoups in flour,sugar and cornstarch. Will get handled scoups. 11B - Bleach water available(sanitizer-100ppm) but cloths not kept in sanitizer are on counter 16 - No CPR poster or equipement available at this time.

Comments: 1H--Raw Fish found in uncovered stainless steel bowl on shelf in walk-in cooler from unapproved source(no proof of purchase). When asked about the fish, the worker stated it is for his own personal use. Inspector instructed worker to remove immediately and that it is not allowed to be in establishment. Corrected. 5B--General Tso's chicken found in bowls in kitchen @ 110 degrees using inspector's calibrated food testing thermometer. According to worker, the chicken was cooked approx. 1 hour ago to >165 degrees and is now in the cooling stage. I instructed the worker to place chicken into walk-in cooler immediately in shallow racks and monitor temperature to achieve proper cooling guidelines. Reviewed: 120 degrees--70 degrees in less than or equal to 2 hours THEN 70 degrees to less than or equal to 45 degrees in an additional 4 hour window, with product being in shallow pans and uncovered until it is less than or equal to 45 degrees. Corrected 8A--Food found uncovered in walk-in cooler and freezer unit. 8D--Single service items on shelves in to-go area are uncovered. 11B--Sanitizer wiping clothes found on counter tops in kitchen, not stored in sanitizer bucket between uses. 12E--Paper towels missing from hand washing sink in kitchen. Worker explained they are using the box of facial tissue for that purpose. Instructed worker to purchase paper towels as soon as possible. 15A--Floor of walk-in cooler and step of door frame of walk-in cooler are rusting.
