Comments: McDonald's - Oneida, inspection conducted Thursday prior to lunch-rush. Discussed, observed, the daily cook-temp verification of the grills, and raw burger and chicken cooking procedures. Cook-temps observed: quarter pounder 186F, hamburger 172F. Chicken tender holding-temp observed 168F, and poached eggs 158F. Floors under and around the beverage stations and the drive-thru area were observed adequately clean, and discussed the improved cleaning procedures with manager. Adequate handwashing observed. A new hose had to be installed recently at the mop; suggest installing a back-flow preventor in-line with the hose and faucet. Restrooms adequately maintained. Hair restraints observed to be worn by all staff.

Comments: McDonald's - Oneida, inspection conducted Wednesday post-lunch rush. Observed and discussed newly incorporated "active managerial control" checks and procedures for this location. Upon arrival, the establishment was observed to be noticeably cleaner compared to previous inspections. All hot holding and cold holding temps found at proper adequate ranges. Discussed the pending introduction of uncooked beef to McDonald's daily operation, and the return of the chicken tenders (uncooked) to the daily operation. Thermometers available and installed throughout. Hair restraints and hand barriers utilized. Restaurant manager is complimented for control and procedures.
