Comments: Otto Shortell Middle School, inspection conducted Wednesday at lunch. Service begins at 11:40am. Pizza, chicken patties, and tossed salads for lunch today. Pizza holding temps observed 155-179F. Chicken patties, 155F. Discussed procedural changes to be developed to maintain cold holding temps during entire service time for salads and deli sandwiches. This facility should install an ice machine to assist with food service cold holding (ice bathes) and cooling procedures. This inspector believes that the cryo-pack ice sheets are an inadequate means of maintaining proper cold holding temps. Thermometers are installed throughout all refrigerators and freezers. Dishwasher observed to be operating as per manufacturer's spec, rinse observed 184F. Hair restraints and hand barriers used.

Hot holding temperatures adequate: fajitas chix = 177F, refried beans = 155F, chix patty = 149F, corn = 160F. All salads assembled using pre-chilled ingredients then held in refrigerator. Oneida schools utilize prewrapped single service utensils, and single use plates. All hoods, and equipment maintained clean. Thermometers available throughout. Cafeteria staff complimented for cleanliness and procedures.

Discussed the roof leak and drain hose issues with office and cafeteria personnel. A hose from the roof is also draining into the staff break room sink. There was no water draining from the roof at the time of inspection. Hair restraints and hand barriers used. Sanitizer buckets used. Dishwasher temperature logbook maintained, temps range: 185-187F.
