The mechanical dishwasher is non-functioning, the technicians have been working on it since last school year. All single-service use utensils and plates are being used. Pre-wrapped utensils available. The 3-bay sink is being utilized for cleaning cook wares and some random trays. Discussed the work order submitted last week for the leaky elbow under the middle bay sink. Ecolab multi-quat sanitizer utilized: observed adequate strength and water temp, 110F. The wall and area surrounding the mop sink has been repaired and is now a smooth, cleanable, non-porous surface. *Satisfactory*

Hot holding adequate, for lunch today: chicken nuggets 146F, French fries 141F, and baked beans 152F. French frie cook temp observed, 163F. Chix cook temp observed, 175F. Thermometers available throughout. Digital stem thermometer utilized. Discussed the pending repair to the mechanical dishwasher, some internal mechanism needs to be replaced, no food safety (temperature or sanitizer) concerns related to dishwasher repair. Hair restraints and hand barriers worn. Discussed utility sink area and the damaged wall to be repaired this month. *Cafeteria staff is complimented for cleanliness.

Discussed the dented can policy implemented by the organization. Encourage removal of any unused equipment.
