The mechanical dishwasher is non-functioning, the technicians have been working on it since last school year. All single-service use utensils and plates are being used. Pre-wrapped utensils available. The 3-bay sink is being utilized for cleaning cook wares and some random trays. Discussed the work order submitted last week for the leaky elbow under the middle bay sink. Ecolab multi-quat sanitizer utilized: observed adequate strength and water temp, 110F.
