All cook temps observed adequate: 203F, 190F, and 168F. Discussed the possibility that the circulating fan could be responsible for cooling the food on the service line. Discussed with head custodian the planned capital project renovation to start in the spring; the architects/engineers should have incorporated a "staff-only" restroom for the food service workers. Discussed with kitchen supervisor the available space and ability to pre-chill #10 cans prior to portioning the daily "fruit cups". A new evaporator was installed in the walk-in refrigerator last night. The interior of all freezer and refrigerators were observed to be clean and maintained. |
