Comments: Boliver Elementary School inspection conducted Monday during lunch. Hot holding temperatures observed proper and adquate. Cold holding temps throughout observed adequate. Dishwasher rinse temp observed, 195F. Discussed anticipated renovation to behgin demo during spring break; staff voiced concerned to this inspector regarding the loss of and/or absence of staff restroom in the approved drawings. Thermometers installed in all coolers and heated cabinets. Equipment maintained clean and sanitary.

Comments: Boliver Elementray School, inspection conducted Tuesday during lunch. Chicken nuggets, french toast balls, sausage patties, hash brown discs. Hot holding temps adequate for sausages, hash browns, and french toast balls: 150-167F. All cook temps observed adequate: 203F, 190F, and 168F. Discussed the possibility that the circulating fan could be responsible for cooling the food on the service line. Discussed with head custodian the planned capital project renovation to start in the spring; the architects/engineers should have incorporated a "staff-only" restroom for the food service workers. Discussed with kitchen supervisor the available space and ability to pre-chill #10 cans prior to portioning the daily "fruit cups". A new evaporator was installed in the walk-in refrigerator last night. The interior of all freezer and refrigerators were observed to be clean and maintained.

Comments: Chittenango Boliver Road Elementary School, inspection conducted Friday at lunch. Pizza, chicken nuggets, broccoli, and salad offered today. Hot holding temperatures adequate, 140-155F. Discussed planned/anticipated cafeteria/kitchen remodel. The kitchen is to be relocated and newly constructed with new equipment. Discussed with staff, the absence of a employee/staff restroom from the construction plan. The high temp mechanical dishwasher is running as per manufacturer's specs, rinse observed 194F, and the wash temp gauge has been replaced. The interior base of the Hobart reach-in has been resurfaced. Hair restraints and hand barriers are worn.

Observed adequate utilization of hand barriers. Refrigeration logs maintained and reviewed. Product stem food thermometer evaluated for accuracy. Sanitizing solution prepared for use. Discussed replacing thermometer in ice cream freezer in cafeteria.

Mechanical dishwasher operated in accordance with manufacturer instructions; Wash temperature at 188 degrees Fahrenheit and final rinse temperature at 190 degrees Fahrenheit. Steam kettle drain is adequately plumbed at time of inspection.
