Discussed procedure to prepare egg salad including using pre-chilled ingredients such as mayonnaise. Observed milk in service cooler at a temperature of 41F. Observed cooked ground beef being cooled in walk-in cooler. Beef was in uncovered perforated metal pan in a depth less than 4 inches.

Facility is using mesh cloth at 3 bay sink for drying.
