Digital thermometer available for evaluating cooked potentially hazardous (TCS) foods. Chlorine test kit available for dish ware washing and wiping cloth solution. Discussed proper cooling of egg rolls with Operator during inspection including use of sheet pans and limiting depth of egg rolls to less than 4"inches while cooling inside walk-in cooler with foods uncovered while cooling. Also discussed routine hand washing and proper use of plastic gloves and utensils with Operator. |
