Observed 3 bay sink set up at bar with wash-rinse-sanitize method; sanitizer (quaternary ammonia) at 200ppm. Observed accurate probe thermometer and demonstrated calibration process.

A time table of compliance date of July 10, 2013 was established to correct the above-mentioned violations except for repair work to floor at kitchen cook line and dish machine area. Will conduct a re-inspection after 7/10 to determine compliance. Also established a time table of compliance date of August 1, 2013 to repair floor surfaces which are in disrepair along kitchen cook line and dish machine area.
