Observed plastic sixth pan of sliced tomatoes at 45F in sandwich make unit below fill line, across from flat top grill. Plastic sixth pan of diced tomatoes in same unit had a temperature of 44F. No other potentially hazardous time/temperature controlled for safety food in make unit to evaluate. Discussed leaving sandwich make unit lid closed, and placing inserts of appropriate sizes to reduce the amount of space for cold air to escape from unit. Commercially prepared condiments are stored in bottom half of make unit. Observed stainless steel third pan of shredded mozzarella cheese at 45F in pizza make unit, located across from pizza oven. All other food items such as mushrooms and pepperoni located in pizza make unit had a temperature of 45F. Worker was preparing several pizza at time of inspection. Discussed when not preparing pizzas to close make unit to prevent cheese from heating due to hot pizza oven. Recommended decreasing the temperature of all cold holding units to below 45F. Observed 2 lbs of raw chicken in plastic container at 37F in walk-in cooler. Observed chicken wings in food grade bucket at 38F. Commercially pre-cooked meatballs in plastic container had a temperature of 38F. Observed facility sanitizer test strips (quaternary ammonia). Observed employee bathroom located outside of facility. Door was unlocked and readily accessible for employee use. Bathroom had soap, paper towels and warm water at time of inspection. |
