Comments: Violations from previous inspection have been corrected. Coat rack for employee items was installed in stairway to basement (15C CORRECTED). Soda gun holster and drain line have been repaired/cleaned (10B CORRECTED). Wiping clothes at ice cream bar are stored in sanitizer in third bay of 3-bay sink (11B CORRECTED). Sliced tomatoes now stored in insert in top of sandwich make unit (39 dF). Items in inserts in sandwich make unit all stored below lip of insert and the lid to the make unit is closed when not in use. Melted margarine in metal insert on grill was 140 dF; previously discussed with operator that margarine is a potentially hazardous food. Meat sauce is now being held in steam table, instead of crock pot; discussed with operator keeping water level high enough and keeping water hot enough throughout the day to ensure that meat sauce is at least 140 dF. Provided food safety summary sheet to operator. | ||

Discussed with operator rearranging sandwich make unit so that potentially hazardous foods (meats and cheeses) are kept below the lip of the inserts they are in. Operator agreed to keep non-potentially hazardous items that aren't used as often in the bottom of the unit to make more room for the meats and cheeses. Operator also agreed to keep the lid to this unit closed when not busy preparing food. Also discussed with operator keeping sliced tomatoes at or below 45 dF by putting insert containing tomatoes directly in ice (up to the level of the tomatoes in the insert). Currently 1/6 insert with sliced tomatoes (along with 1/6 inserts of onions, lettuce and other non-potentially hazardous items) is in metal hotel pan which is in a second metal hotel pan containing ice. Sliced tomatoes were 45 dF at time of inspection. Discussed with operator how bananas are handled (no bare-hand contact) when preparing banana split sundaes. |
