Manager stated new owner may take over next week.

Item 15C- Unnecessary equipment removed from basement storage area. Provided education on cooking and cooling of chicken wings. Food items shall meet required cooking temperatures the first time- no under or pre-cooking of food items is permitted.

Comments: the following violations were corrected from the previous inspection; 8a - no food items stored on floor, raw animal protein products properly stored, 8b - garbage can not observed as food prep surface,11d - surfaces under and behind self-serve soda machine have been cleaned, 15a - basement floor has been cleaned. Discussed remaining violations with owner, we agreed on a ttoc of 3-20-14 to complete all outstanding items except - she assures me she will obtain a new container of quaternary ammonia test strips with indicator card (to evaluate strength) immediately. All violations on this inspection report are under a ttoc of 3-30-14 and were originally cited on the inspection from 2-6-14. NOTE: conducted food service training with owner only. She will train staff. She did post a chart of cooking temps on the wall near the grill.

Also scheduled a food service training with staff for 2-10-14 to review basic food service requirements. Facility demonstrated proper use and knowledge of hot holding waiver. Provided copy of waiver and informed them waiver information is required to be available onsite.
