Comments: At time of re-inspection a HACCP exercise was conducted. Violation 10B- Cardboard lining bottom shelf of prep table underneath slicer has been corrected. No other items were evaluated at time of inspection.

Observed worker slicing ham having a temperature of 38dF also wearing gloves. Observed sliced tomatoes and provolone cheese in top of cold holding sandwich make unit at a temperature of 42dF. Sausage in hot holding kettle was being reheated during inspection, and had a temperature of 180dF. Meat sauce in commercial cold holding unit had a temperature of 38dF.

Due to progress made by operator thus far and the upcoming holidays, operator requested an extension of TTOC for remaining items. TTOC for all violations extended to 2-1-15.
