Comments: Observed thermometers in all cold holding units containing potentially hazardous food or time/temperature control for safety (PHF/TCS) and all cold holding units were observed at temperatures less than 45F. Observed properly functioning dishwashing unit that utilizes chlorine-based solutions for disinfection. Staff requested CCHD provide facility with more hand washing stickers as some stickers are starting to peel. No evidence of staff cooling food during time of inspection. Attempted HACCP after conducting inspection, but no cooks were available at the time. CCHD will follow up with staff to conduct over the phone HACCP.
