Comments: Reinspection conducted to evaluate correction status of violations observed during previous reinspection. All items, including 11D-door gaskets and door to walk-in refrigerator have been cleaned. Also, white dough buckets have been cleaned; 15A-floor around fryer, near freezers, under cooking and refrigeration equipment, near rear door were cleaned, and wall behind fryer was also cleaned.

Per owner and manager, facility does not typically prepare potentially hazardous pizzas (white garlic, meatsauce, mushrooms, or other meat or vegetables) for holding, but would like to retain waiver to use time as a public health control for these pizzas for planned future use. No potentially hazardous pizzas observed during inspection. Demonstrated calibration of analog probe thermometers during inspection. Facility has ice on hand for calibrating. Facility also has digital probe thermometer. Offered no fee food worker training to owner and manager.

Discussed monitoring temperature in top of sandwich make unit. Items in top of sandwich make unit varied in temperature- sliced tomatoes 42dF, sliced American cheese 47dF, Sliced roast beef 47dF. Employee turned down unit and will verify temperature in 30 minutes and throughout hours of operation. Discussed requirement for all food being served out of facility to be made from an approved source. Food can not be made in a home kitchen and brought into facility. CCHD to discuss house sauce with operator.
