Hot holding soups and mac n cheese found at adequate temps: pasta fagioli 175F, chicken noodle 168F, and mac 145F. Hot holding freshly made meatballs found holding at 160F. All colding holding found to be adequate: kitchen prep cooler sliced tomatoes 40F, front counter prep cooler chicken salad 37F. Digital stem thermometer available and used. Hood is scheduled to be professionally cleaned on this coming Saturday, 4/7/18. Restrooms maintained clean. Discussed submitting a Notice of Intent for any new equipment installation or changes to the operation or facility. A N.O.I. was submitted prior to inspector's departure. *Owner/operator and staff are complimented for cleanliness, and executed process and procedures. |
