Comments: Follow-up to inspection of March 20. Upon arrival, found bins of fried chicken wings and egg rolls on the counter near the deep fryer. Informed owner that room temperature storage has been cited in the past as a violation for bulk foods which have been removed from the deep fryer earlier in the day. Discussed monitoring the temperature with a probe thermometer, once foods have been removed from the deep fryer, and then placing those fried foods in the cooler once the internal temperature reaches 120F. Owner stated he understood this requirement.
