Sandwiches were said to be temped at 165 degrees and then placed into hot hold. Discussion on the minimum hot hold temperature being 140 degrees. As inspection continued, sandwich temperatures increased; indicating that the hot hold unit may require an earlier turn on to adequately hot hold potentially hazardous foods. Operator states the unit is turned on immediately upon arrival each morning. Leftover sandwiches, temped at 133 degrees average, discarded at time of inspection. Because staff was breaking down breakfast service at time of inspection, sandwiches were discarded. No sandwich service at time of inspection. Kitchen staff may not have adequate area for personal items outside of the food preparation and storage areas. A suggestion is to allow kitchen staff an area for personal items in the janitors room adjacent to the food preparation area. Refrigeration temperatures adequate. Milk cooler temperatures adequate and accurate thermometer in unit. Active sanitization at time of inspection. Education given on all deficiencies. All violations must be corrected and may result in enforcement. |
