Manager states that four employees will be standing at buffet line to supervise customers who dish their own food. Leftovers are reserved for service later in the week. Temperatures adequate throughout: slaw 41 degrees, mac salad 35 degrees, peppers and onions 41 degrees, cheese on salad bar 42 degrees, and jambalaya in walk in temped at 38 degrees. Water has adequate chlorine residual at time of inspection. College plans on expanding and renovating kitchen after this season. NYS Dept. of Health office will need plans prior to any changes being made.

A pan of chili stored in the Display Cooler by the food slicer was measured to be 34.8 degrees F. A chlorine residual of. 0.2 ppm was measured at the Kitchen Hand Wash Sink at 12:28 PM. The Final Rinse Temperature on the Mechanical Dish Washer was 170 degrees F. Facility obtains their water from a Storage Tank located on the SUNY Delhi Lower Campus, according to the Maintenance Person. Report e-mailed.
